Mine cryptocurrency.. if someone can figure out how to generate electricity, mining machines can consume as much of it as can be produced.. not $1000/mo but $millions per month, actually the only limit would be obtaining enough mining hardware.
If you generate electricity in-house and burn it on crypto, you're also avoiding paying any VAT on the electricity, which might be beneficial..
