So, I finally got around to doing some more experiments with Bill's poor mans liquid nitrogen (alcohol cooled with dry ice) <a href="http://amasci.com/news.html>see here, 9/30/2003</a> Since i was working with food, i used everclear, an easily availabe retail sold 95 percent ethanol. nasty stuff, i took a shot once on a dare, it dryed my entire mouth and throat. Anyways, to 16 ounces of chilled to the just beginning to freeze ice cream mix, i added 4 ounces of everclear that had chilled with 2 pounds of crushed dry ice for 10 minutes. unfortunately, it did not work, there was not quite enough cooling to do so, however, using alcohol and dry ice to fill teh normal ice cream maker insterad of rock salt and ice DID work amazingly well. and 40 proof ice cream is nothing to sneeze at.
However, im used to handling dry ice with my bare hands. With gelled ethanol coated dry ice, this is much more dangerous. I have a couple small white spots on my fingertips, i gave myself frost bite in about 2 seconds of handling a piece. Not quite on topic, but hey, I dont have the experience or equipment to experiment on the level of your own fine selves, so i contribute where i can. -- That which yields isn't always weak.
