If the water was at 5 to 10 bars, it could easily be heated to 150 - 180 C. in the preheating process. At that point, being wrapped up in that massive insulation blanket, it would stay over 100 C for hours. It could even be boiling the small trickle of water being fed in by the pump during that time. Then when Rossi released the pressure by opening the valve at the end of the test, as you said, the water coming out would immediately cool to 100 C. The most obvious contradiction shown in the video is that modest stream of steam coming out of the hose at the top of the E-Cat, versus the robust stream of water and steam coming out of the valve at the bottom. It's obvious that they are not part of the same physical reservoir.
