ProcMail can do it. It pre-handles the mail and is set up with (fairly) simple scripting rules as far as "if you see this then do this". Ive seen some to add X-header tags of various types. Personally I use it on one system to "see" the From and change it. I get many text messages from cell phones in my email box and not paying attention to who it was that said what was getting me in trouble so I convert the phone-numbers to names in the from as it hits my mailbox before I read it.
