Nick - You can probably terminate one antenna connector, but I'm guessing that a proper terminator costs about the same as an antenna, and the extra antenna is presumably helpful (multiple antennas should be required on the 802.11ac cards to do the beam forming).
It's likely that you can use software to turn off one of the antennas on the Wistron, and similar cards.
