My first suggestion would be to try the ShrewSoft VPN Client 2.2.0beta2.
The 2.2.0 code stream contains a number of changes related to Windows
7, so it may resolve your issue.
If the problem re-occurs, I'd suggest attaching the output from
'ipconfig /all' as well as 'route print', taken both when the VPN is
connected and after you've disconnected (so 4 outputs in total).
You could also include a debug log from Shrew, as described here:
