I wouldn't be concerned about unnecessary stuff installed that just occupies disk space for as long as it is not running. I usually disable all services except for: network sshd syslog atd random iptables crond anacron vservers and you need to make sure that sshd is bound to the main server ip so that vservers can still use theirs.
