I think people have misunderstood what my question was. I guissing that there is a function call in the kernel network code that returns the MAC address of the interface. The return value of this call would be displayed by ifconfig as the HWaddr. All I am after is a way of configuring the vserver with the MAC address I want returned by that function call. It doesn't need to be used anywhere else for the real networking functionality, as long as inside the vserver (I guess for context != [01]) ifconfig shows the virtual MAC address. Hopefully that clears up any confusion I've created.
