1- Use the GUI to choose your plugins and configurations
2- Save the profile
3- Find your home directory (in linux it should be /home/brad :) ) and
then go to your profile directory /home/brad/.w3af/profiles/
4- Copy the profile where needed

Extra note:
Profiles are "INI" files, you can modify them manually.
