I have been looking for such a boat too. I have always used inflatables,
but found a nice stillwater lake that does not allow inflatables and
would like to go back there. I have a Mazda pickup, which is about the
same as a Ranger. I have looked at the Walker boats and may even end up
getting one, but they are a little wider than would fit between the
wheel humps and maybe a little heavier than I want to mess with. (My
friends aluminum boat fits fine, but it takes two to handle and I do go
out alone a lot). 

But the real reason I am responding is that I came across an old Popular
Science (March '86) article about Monfort boats. What caught my eye was
that they were made from ultralight aircraft materials and the perfect
size boat for me weighed 8 lbs. Its from a kit, so I would imagine that
you can adjust some of the parameters fairly easily. Anyway I searched
on the term Monfort Boat and came up with several good hits. It looks
like they are thriving and may be a good option. Here is one link:
