OmniPage use to be king of the heap, but in my experience ReadIris is now a far superior package. It's accuracy is extremely high, and it does a much better job of retaining text order, if not actual page layout.
I haven't used OmniPage for a while, but the last time I used the OSX version, it was using Classic Photoshop plugins to do the scanning. It was a disaster - slow and very messy to operate. Hopefully things have improved since then.
