thanks everyone! The safari preferences trick worked - also found a
preference in mail which had netscape changed as the default mail
reader (!). I honestly didn't do any of that - must have been some
default behaviour of the netscape installer. Really a strange place for
either, considering this seems like something that should be in the
system prefs.
I'm too chicken to run the 10.3.8 or security updates now - in my case,
the kernel panics recurred no matter what I tried. I couldn't even get
into the finder, it would hang whilst the spinning fan thing on startup
was going. Tried the unplug trick as well, no luck. Only the system
install disk would startup, not even my repair disk with a bootable
system and diskwarrior would work.
So I'm going to hang on until 10.4 I think. The thought of wiping
totally clean my hard drive right now is a little horrifying.

In Safari Prefs >General there is ability to set default browser. Try
that. I thought you could do this in System Prefs but that doesn't seem
to be the case.
