Something does not quite add up there :-

One of my sons is considering becoming a switcher

As in changing from PC to Mac

by purchasing a Mac Mini.
However, he would like to keep his old

serial HP810C Deskjet printer.

As in an old Mac printer .... ?

I was under the impression that PC were only Parallel or ethernet or new PC = USB

Does anyone know whether it is possible to obtain a workable solution for the Mini to talk to the HP?

Golden Rule No 1 :      Anything is Possible

But whether you really want to do it is another thing :

Probably cost at least $20 to $30 for a Serial convert USB cord.
Then you need the patch software for Classic,  ( if you need classic )
and for OSX you will need to find a Gimp Print driver.
 There may be one available .

And that was with Panther ... don't know about Tiger ,
which the new Mini is likely to have .

On the other side of the coin there are a large number of USB Printers,
and some Multi function i
in the range of $70 to $250 .
