The easiest way I found to do it (for a client that had the same thing) was the Griffin USB iMic. They sell for about $69. With that and the software the comes with it, you just bring in the audio and pop it into iTunes. I think I even had a "print up" of how to do it floating around somewhere as well. Hope that helps.
