Hi Ken
take your cursor onto the iTunes in the dock, drag it out of the dock and just let go, it will disapear in a puff, go up to the menu bar "go" scroll down to applications and this will open your applications, look for iTunes( if theres the old and the new one trash the old one)and then just drag the new iTunes app. into the dock, that should do it ( hopefully) if it still doesn't work possibly someone else on the list,more knowledgeable than me will be able to help.

Have you tried deleting itunes from the Dock, then drag your new iTunes app. back into dock
