I'm not sure about the most recent iBook models, but I'm lead to
believe that previous models only supported screen mirroring. That
said, there is a known hack that will enable extended desktop mode on
iBooks:

Be sure to read up on the hack and NOTE THE WARNINGS. It is not
without risk on some models and the repercussions are yours alone to
weigh up.
