Morning Pat,

LaTex documents I create these days I utilise a GUI front-end called LyX . I use this for most of what I determine as normal word processing stuff i.e Essays, Report, Letters and the odd books etc.

This does take some effort to install although latest version very simple once TeX is in place.

I do not know if it will suffice for your husband, but it does import Word documents ?

And of course OS X being a branch of Unix it does have command line. So, CTAN great resource for TeX, LateX and most tools should work or be able to compile so as to work. One can even use LateX in this way within the terminal.
