"Audio In" (or similar freeware) to record, then drop the file into
iTunes, afterwards you could convert it to mp3 and keep it if necessary.
The recording level is set in Sound prefs if required. Keep the
meter/monitor full without "maxing out" (clipping) or err a little lower
to be safe.
Do a few tests to get the levels right in the recording, you can use
existing music or speeches to compare sound levels.
