I've never tried this myself... but what happens when you set the
iTunes Preferences>Advanced>Burning to "MP3 CD"?
Will it automatically convert the files to MP3 format on the fly? I
understand that when you choose Audio CD it automatically converts to
AIFF (native CD format) without making duplicate copies in your
iTunes library (which a is a good thing as AIFF files are HUGE).
