I'm trying to use the volume adjustment in iTunes

I can't answer your question about the iPod / iTunes difference but I can add a little commentary :

All the options of volume adjust and sound check do a poor effort in keeping the levels the same in the real world.

If you want to use your iPod or iTunes as a background (or foreground) music source in your home or business I can thoroughly recommend buying an audio device called a compressor which can be had for as little as $200.

I do it all the time at work, home, parties and even my wedding. Great music "leveled out" as is were.

Sadly the compressor is about 50 times bigger than the iPod so it won't fit in your pocket quite so easily on the bus ;)

I'd also be betting that there is some way of getting iTunes to play back through a software compressor plug-in such as the many software compressors for tools like Logic, Pro Tools etc.

Cheers, Antony.
