Have you tried downloading the new EyeTV 2.3.2 just released today?  It
might get the old device working as it has a bunch of bug-fixes and
performance enhancements as well as some great new features.

My recommendation would be the Elgato EyeTV Hybrid.  Being the size of a USB
thumbdrive you don't have to use up a PCI slot in your G5 and it has both a
digital and an analog TV tuner and composite and S-video inputs for hooking
up your old VCR.

My wife is using one on her MacBook at the moment to digitise old VHS tapes.
It's working great so far, particularly in concert with Toast which if you
just want to blast old VHS tapes onto DVD without creating funky menus in
iDVD, takes far less time.

We've got an older EyeTV 400 and now one of these new EyeTV Hybrids on our
lounge-room iMac G5 which allows us to record two channels simultaneously.
I've also just now tried a second EyeTV Hybrid plugged into the G5 making a
total of 3 tuners and it schedules and records three channels simultaneously
quite nicely. 
 
The recorded files play back great though our 1.8GHz G5 iMac can struggle a
little bit if you try to view 2 or 3 live channels simultaneously while also
exporting a movie out to H.264 (it can get a bit jerky every now and then as
it drops the odd frame or two to keep up).  Sounds like an Dual-core intel
chip-equipped Mac would be just the ticket for this.  :-)

Daniel Kerr at MacWizardry might still have some of the Hybrids in stock for
around $260.
