Hey Mark I've been away for a long time and have no idea if you received any answers.
I don't think its more can the G5 handle it, more can the graphic card put in the computer when originally purchased (unless upgraded later) can. I don't think earlier G5's can handle a 30" unless they had it upped after the newer card was released. For a definitive answer maybe try MacTracker and see what the monitor requires to run or ring your local AppleCentre Techie, they should be able to give a definitive answer.
