You may already be across these, however in terms of online resources:
- http://www.ubuntux.org/   (Ubuntu community for beginners)

- http://www.ubuntux.org/blog
- http://fridge.ubuntu.com/
- http://www.ubuntu.com/support (includes link to Ubuntu official documentation)

Depending on what Linux is being used for, at some stage an understand of Linux shell scripting may be required. There is an excellent online book/reference for bash (the main shell used by Ubuntu) available here:
http://www.tldp.org/LDP/abs/html/

With something like Linux, the online resources are excellent and if you get stuck, you can ask a question in one of the forums - maybe you don't need a traditional book at all.
