Go to /Library/Internet Plug-Ins. Remove AdobePDFViewer.plugin, or do
what I have done: create a new folder in the Plug-ins folder called
Disabled Plug-ins or something similar, and move
AdobePDFViewer.plugin there. Safari won't find it, but it's there in
case you ever want it again.
Just one more point though: this won't prevent PDFs from opening
directly in Safari, since it has its own built-in PDF viewer which
becomes active if there are no others available. Once the PDF has
loaded you can just use Safari's Save command to save it to your hard
drive.
