It really depends on what you want to use it for...music or video? If you want it for music then just go for the larger drive, if you want it for video then you would want the larger screen.
However, if you are going to be after a new mobile phone in the next ~5 months then why not wait and get the iPhone for only a bit more than the iPod Touch?
