Hi Rob For me: Apple Mail or Thunderbird, just a question of appeal. There is little difference in features. I find Address Book.app is a bit of a pain and on the other hand Thunderbird lacks the nifty 'thread highlighting' Mail does.
Do you have an interest in accessing Exchange at your Uni? Maybe folk there have some advice on this for you too.
