I also have the 8GB iPod Touch (courtesy of Flexirent).
I know you have probably done this already, but if you are plugging in via a USB hub, ensure the power is on. I went through most of what you described before remembering I needed to do this.

OS 10.5.3
iTunes 7.6.2

* Disconnected all usb devices
Tried each of the usb 2.0 ports
Turned iPod off and on again
Restarted computer and reconnected iPod
Have latest version if iTunes installed


Old versions of iPod Updater are on the computer. Should I remove them?
