I also have the 8GB iPod Touch (courtesy of Flexirent).
I know you have probably done this already, but if you are plugging in
via a USB hub, ensure the power is on. I went through most of what you
described before remembering I needed to do this.

Have latest version if iTunes installed
Old versions of iPod Updater are on the computer. Should I remove
them?
