Thanks to all for suggestions.
We successfully used PhoneView to recover over 3,000 photos from their
iPod Touch. Even though the photos were only low resolution versions
of the originals they were happy to have their photos back. Let's hope
they take the advice regarding backup stategy for the future.

When iTunes prepares photos for iPod storage, it stashes them in a
format that isn't readable by imaging programs, such as iPhoto or
Photoshop.
Be aware that as part of the transfer to the iPod Touch, the
photos were "optimised" to a uniform resolution.
For most digital images, that means a reduction in image quality
compared to the original image.
Certainly, a reduced quality image I guess is better than nothing.
They could use Ecamm Network's iPhoneDrive (now named PhoneView,
works with iPhone & iPod Touch).

Need OSX 10.4.11 or later & iTunes v7.3 or later
PhoneView will allow you to download a demo & copy to your Mac in
Demo mode. It will expire after 7 days.
Also in Demo mode it will only provide access to the first 20 of
your synced photos, you have to purchase PhoneView for full synced
access.

Need OSX 10.4 (Tiger) or OSX 10.5 (Leopard)
TouchCopy in the Demo Mode will show you what is on your iPod
Touch but won't allow you to copy to your Mac without purchasing

iPodRip is Not supported for iPhone or iPod Touch YET!
Support for the iPhone and iPod Touch is coming soon!
