I see Stephen, I don't think you can change the default for new songs added being checked.
I find it is best to create Playlists and then I sync certain playlists for my iPhone and my other iPods. When my iPhone or iPods are connected I have selected under 'Music' - 'Selected Playlists, artists & genres', & have checked the playlists I want. 'Include Videos' is selected & I have checked certain videos for my iPhone. 'Include Voice Memos' is also selected.
