Hi Tony, I would suspect you have not selected your card to 'My Card'. It shows a little symbol of a person beside your card if it is 'My Card'.
You need to select your Card in Address Book and then Go to 'Card' in Menu And scroll down to 'Make this My Card' Then if you have a photo in your card it will display in Mail messages.
