Hi Peter, With regards to your question about working when out of Internet range all of Apples products, such as Numbers, will allow you edit a local copy and update the iCloud version next time you get an Internet connection. If you update two local versions from different devices you will be warned of a possible conflict next time you synchronize and be given the option of keeping multiple copies of the document or choosing one over the other.
Apple's way of handling these situations are the expected behavior, but in the end each company could handle offline editing in any manner they choose. So some less well designed products could in principle make your documents unavailable when you are offline.
