Not sure what’s happened here. There is no “bin” on an iPhone, akin to the Trash can on Mac or the “Recycle Bin” on Windows, so I’m not sure what Bin it was that she hit. When you delete files on an iPhone they get deleted, but that’s usually by tapping a specific “Delete” button within an App, so I’m not at all sure how your wife manage to put her Notes “into the Bin”. There are 3rd party apps which can deal with deleted files recovery, but from your description I can really offer any constructive advice because I can’t visualise what might have happened. Your first and best resource is your most recent iPhone backup, but if that hasn’t been done in a while then you’ll lose any recent data when you try to restore from the backup.
