I think I just found the issue to the continuing auto insert.

   In my Mac Contacts are the following folders.

   "All iCloud" (this is the one I use)

   “All on my Mac”
   I have found that Auto insert is including “All on my Mac” contacts as
   well.
   So I need to work through that folder and make some changes.

     Hi folks.
     I got fed up with Mail auto inserting various emails when I am
   sending
     an email.
     So I went to Window/Previous Recipients/Remove from List.
     Then deleted all of them.
     But I still get old the old email address options popping up when I
     start a new email.
     Any ideas please ?
