While writing in NOTES I found that all conversations were being accepted and translated to text. I tried to tournament of voice to text in General -Keyboards- enable / disable dictation, to no avail. No help from apple or YouTube. Eventually I found in Accessibility- voice control!! This little demon 😈 is the source of the issue. I turned it off and problem solved. I thought you might like to know about this to avoid similar frustration.
