The documentation is all going to be on Appium's site. I can't vouch for how accurate it is right now: http://appium.io/slate/en/master/
That SO answer is a little misleading. There are Ruby bindings for Appium, but they use Selenium, not the other way around. There is no current solution for using Watir-like syntax.
