Using a StartSSL cert is the safest route because they have been shown
to work with XMPP servers and they offer free ones to XMPP folks :)

You can use any cert really that works with SSL - it's just tougher to
find the small details to make them work IMO - StartSSL has it all
laid out.

The minimum is s2s port - yes - that's all the remote server will use
to contact you
