You can try it first when you run weston under X to see what it is supposed to show, and then when using weston-launch. VT switching should work, but if it does not, you might need to use ssh for access from remote or use a delay to start weston-simple-shm in another VT. If weston-simple-shm seems to run, but still nothing on screen, then we should start suspecting an issue with Nouveau. Did you check the kernel log for Nouveau errors?
