"Oh land" is simply a shortened form of "land sakes alive."  In other words, 
it's like saying "Oh my Lord" but without taking God's name in vain.  It's 
along the same lines as saying "dang it," "shoot," "aw, heck," or the 
like -- in polite society these phrases are considered less offensive than 
using un-Mayberry-like words.
