...because (this is just my take) "Bee" fits her character better,  
portraying her as someone who's busy by nature and who produces fine meals  
like a bee 
makes honey.  Worker bees have a purpose and stick to it, and  Aunt Bee going 
about her day, or leaving the long list of reminders to Andy and  Opie when 
she goes on a trip, seems to fit that.  Bea" is just a woman's  name in this 
context (and it may have even been what was originally in mind) but  "Bee" just 
seems to fit.
 
And despite her nature to constantly want to serve others...we know good  and 
well she's the "queen" of the Taylor household.  Quite a few things are  done 
just because of her, in fact that why "The Pickle Story" is such a  classic.
