I think the episodes where Aunt Bee asserts herself - especially in the defense of Mr. Frisbee - show a lot about her character. She is not some meek old lady who can't think for herself. She has strong passions and convictions and is not afraid to show them. However, she is also compassionate and caring. This makes her a three dimensional person - and one that I greatly respect! I love it that the writers put this spark in her. What's more, I believe that Andy respected it too.
