Yes, and did Andy and Barney *really* learn to love those kerosene cucumbers?? Actually, unresolved epilogues are good in that they imply that life in Mayberry plugs along even when the cameras aren't rolling. It allows us to believe (or enjoy hoping, anyway) that all the citizens of Mayberry are living life day to day just like we are, except that every so often a camera catches some of what is going on. So the unresolved epilogues encourage our voluntary "suspension of disbelief."
