Todd, I just go the stylesheet route. My default handling is to simply set up a mobile stylesheet with only the most basic styles in it... nothing fancy, just functional. This is pretty dependant upon using tableless designs though. Looks like theres a good series of articles just started on this subject over at Authentic Boredom too:
