I added the page number separately and then realized I could add it in
the footer. I did a search and it said to just select the page number
(added through the Insert menu) and press delete. Hey presto! It
worked. I am just using Arial on the template - no point getting too fancy.
Spacing seems to be working okay. Just two lines, centered across the
bottom.

Are you using the Footer for the info across the bottom. Have you tried
changing the justification for the page numbers? Have you tried putting all
the elements in a borderless table to keep the stuff apart?
Word is a disaster for this kind of stuff. Be careful with fonts. If the
person is going to use this on a number of different computers you need to
be sure to use a font that is likely to be on all those computers.
