If the images are pixelated it's more than likely you've had to scale up the
images to get them that big - what was your original source? Digital cameras
don't shoot as big as 5" x 7" 300dpi so you've pretty much doubled (or even
tripled) the size of the file to fit the dimensions, which will cause
horrible pixelation and distortion.
Try doing things the old fashioned way - print the images out at their
native size on good quality paper and settings then scan them in at 600dpi.
You should then have enough material to work with the then *shrink* the
images to your required size, which will maintain quality and get rid of
most of the Moiré patterns you'll get with high-res scanning (although it's
advisable to do that clean-up before you shrink).
Can't offer any specific advice with GIMP though as I'm a Photoshop boy all
round...always worth the money.
