you have many questions ;-)

You must know that web-cyradm is only a frontend of a mysql based postfix
setup!

If you want to learn SPAM Messages you can use sa-learn. I have created a
spam and a HAM mailbox,
and if i become a spam mail,i put it via IMAP in the SPAM Mailbox, witch is
trained in a cronjob
with sa-learn --spam /var/spool/imap/s/users/snitch.de0001/inbox/SPAM.

There is also a Webfrontend for Userbased SPAM/Ham Trainings for
amavisd-new.

web-cyradm supports smtp-auth overMySQL, why you think postfix is a open
relay if you setup
your web-cyradm correctly? Only Users who has a Account on your Server are
allowed to relay 
Mails! Look at Luc Delouws Tutorial on web-cyradm.org. There are two ways to
do it. First is saslauthd
and the cyrus-sasl and pam_mysql. The second is the auxprob Plugin you can
use to get Diggest and CRAM-MD5
auth mechs working. saslauthd supports only PLAIN and LOGIN auth mechs.
