I don't know the difference between ubuntu and debian (ubuntu is debian based i think) so i would just try to to more or less the same as on Debian. You need postfix, cyrus, sasl, the conf files for that should be nearly the same. And as long as you understand what you are doing it should be fine if you don't know what you are doing you should probably not try to setup a potential spamserver ;-) This should be no offence, but you may be held liable for misconfigurations - go buy an admin instead ;-)
