I played with this a bit over the weekend but was unable to get it working
on Ubuntu 15.x.

My production servers all run 14.4.

I think the problem is the change from upstart to systemd on Ubuntu. Does
anyone have experience getting uwsgi to start using systemd? I don't know
enough about these systems to get it all right. I think it involves have a
uwsgi.service file defined so that systemd will start it up, but I don't
know for sure how to get that all working.
