[GTK] PlatformDisplayWayland is no longer used for compositing

Reviewed by Adrian Perez de Castro.
We use either WPE renderer or DMABuf (GBM or Surfaceless) so we can
remove all the code used for compositing with PlatformDisplayWayland.
