[CMake] Target PlayStation5 by default

Reviewed by Fujii Hironori.
By default PlayStation builds targeted the PlayStation 4. Move to
targeting the 5.
Update the build definition to use an updated STL. Temporarily turn off
MiniBrowser until further along in the transition.
