[GStreamer] Log errors to layout tests -stderr files

Reviewed by Carlos Alberto Lopez Perez.
Allow user-supplied G_DEBUG environment variable and fallback to
fatal-criticals. Also include
GStreamer errors in stderr files, which might ease debugging on post-commit
bots a bit.
